Consumers' love of organic dairy products continues to grow. In fact, sales of organic milk in 2005 were up 24 percent on a volume basis, reports ACNielsen North America. And U.S. consumers spent $499 million last year to buy organic milk, that's up 27 percent from 2004.

Despite the terrific growth record one must remember that organic dairy accounts for a small percent of total dairy sales. And according to the research group Oregon Tilth Inc, demand for organic dairy products has started to slow - a 20 percent increase instead of 30 percent of 40 percent increases.

Horizon Organic expects demand for organic dairy products to continue to grow at a good pace - about 20 to 25 percent - for up to the next five years. That's why it and others are actively searching for more dairy producers interested in converting to organic production.
